Daphne Lambert
Daphne has been a chef for 30 years; her restaurant has won many awards and was the first restaurant to be certified organic by the Soil Association. She is a qualified medicinal nutritionist. author, journalist & organic gardener. She founded Greencuisine, a healing food centre, in 1995. She works from a holistic point of view creating awareness of how food choices in our diet should not be based only on the physical but embrace philosophical, emotional and spiritual perspectives.
Jonathan Snell
For much of his professional life Jonathan has specialized in the psychology of belief and behaviour and psycho–physical integration. During this time he has worked with a wide range of people from both corporate and private backgrounds deepening their understanding of life and themselves. Jonathan is a graduate in the arts and a practising painter. He co-managed a family smallholding for 15 years. Jonathan works towards the arousal of the emerging truth in people to engage the imagination and fire the creative spirit.

Rainbow foods, fermented foods, marinated vegetables, dressings, biscuits, crackers and wild gathered foods, getting to know soul food.
